Biscoff S'More Crookie

Biscoff S'More Crookie is Crave's return of the Crookie format — the croissant-cookie hybrid — with a Biscoff and s'more build that uses the flaky, layered croissant structure as both the base and the textural contrast for everything above it.

The croissant foundation is the defining structural choice. A flaky croissant dough bakes differently than Crave's standard cookie dough: thinner layers, a crispier exterior, a laminated interior that tears rather than yields. It doesn't have the gooey center of a deep-dish cookie — instead, it provides crunch and a buttery, slightly savory base that sets everything else apart from a standard cookie context.

Biscoff dough is baked into the croissant foundation — the warm spiced speculoos flavor sitting above the flaky base. The two doughs interact differently than either would alone: the croissant layers hold their structure while the Biscoff dough softens and melts slightly into the gaps.

Biscoff cookie butter is stuffed into the build — the full-concentrate spread, intensely flavored, providing the sharpest Biscoff note in the cookie. Against the croissant base, it reads as a filling rather than a structural element.

Toasted marshmallow sits on the surface. The exterior of the marshmallow is caramelized, slightly bitter at the edges, which cuts the sweetness of the Biscoff cookie butter below it. The interior stays soft and stretchy.

White chocolate completes the build — adding creaminess and a sweetness that rounds off the Biscoff spice and the toasted marshmallow char.
